Small Change Saturday: Eat Your Greens

As we ease into summer, an abundant time for produce, I want you to focus on increasing your daily intake of fruits and veggies. An easy way to do this is to try and eat something green at every meal.

 

 

For example:

Breakfast-

Egg scramble with zucchini (or broccoli, or green bell pepper, or spinach…)

Fruit and yogurt smoothie with kale ( or spinach, swiss chard, avocado…etc)

 

Lunch-

Ham and Cheese Sandwich- in place of mayo add avocado (or lettuce, cucumber, etc)

A big big big salad!

Grilled chicken with steamed green beans (or broccoli, peas, asparagus, etc)

 

Dinner-

Shrimp Stir Fry with broccoli, zucchini, bell pepper, spinach, peas, etc

Pesto Chicken kebabs with bell pepper (zucchini, asparagus, etc)

 

 

See? It’s not so hard once you put some thought into it. Make it a challenge with your family or friends to see how many green foods you can eat in a day!
